Oxtail Soup / Indonesian Sop Buntut

Ingredients :


1 Spring onion, cut into 2-3 pieces

1 tablespoonful Margarine

200 g Carrots, cut into 3 cm piece, then halved or quartered

250 g Potatoes, cut into 4-6 pieces, Salt to taste

1 kg Oxtail / beef tail, cut into serving pieces

1/2 tablespoonful ginger, Chopped

1/2 Nutmeg, bruised


Spice (ground) :

6 Shallots

3 cloves Garlic

1 teaspoonful Peppercorns


For Garnishing :

Fried shallots

Spring onions

Chopped Chinese parsley



Cooking Direction :


Place oxtail in a pan with 2 liters water and bring to the boil.

Carefully scoop off and discard the scum floating on the surface.


Discard the stock and replace with 2 liters clean water.

Add chopped ginger, nutmeg and spring onion.

Cover the pan and simmer over low heat till completely tender.


Remove the tail, reserving 1 1/2 liters stock.

Bring the stock to the boil, then add oxtail.


Heat margarine and fry ground spices till fragrant.


Add to the boiling stock, then add carrots and potatoes.

Bring to the boil till the ingredients are thoroughly cooked.


Garnish with fried shallots, spring onions, and Chinese parsley.


Serve hot.

French Onion Soup

French Onion Soup recipe pictureThis soup recipe basically from French Food recipes. The original melted cheese topping brings you a large healthy nutritions inside.
It's simple in the making and easy recipe too. Only top toasted bread with cheese and pour the soup over to melt it.

Another aromatic chickpeas makes it filling enough for a healthy main course


Ingredients :


1 tablespoonful extra virgin olive oil

1 sweet onion, sliced

1 leek (white and light green parts only), chopped

2 tablespoonful garlic, chopped

1/2 teaspoonful fresh thyme, chopped

1 (14-ounce) tinn reduced-sodium beef broth

1 (8-ounce) can chickpeas, rinsed

2 tablespoonful fresh chives or scallion greens, minced

1 tablespoonful sherry

Freshly ground pepper, to taste

2 slices whole-wheat country bread, toasted

1/3 cup shredded Gruyere cheese or fontina cheese



Cooking Direction :


Heat oil in a large saucepan over medium-high heat

Add onion, stir to coat and cover.


Reduce heat to medium and cook. Stir frequently till the onion soften and browned, for about 8 minutes
Add leek, garlic and thyme. Cook uncovered, stirring often, till the leek soften, for about 4 minutes.
Add sherry and pepper.


Increase heat to medium-high. Cook, keep stirring till most of the liquid has evaporated, about 30 seconds.

Stir in broth and chickpeas. Bring to a boil


Reduce heat to a simmer
Cook till the vegetables are tender, about 3 minutes.

Remove from the heat and stir in chives or scallion greens

Place bread in the bottom of 2 bowls

Top with cheese.

Ladle the soup over the bread and cheese


Serve Hot

Hot Pumpkin Soup

Hot Pumpkin Soup recipe pictureTry this Chinese Food recipe. It Needs A lot of ingredients and herbs but practically simple in the making. Like another classic chinese recipe cooking art, it has a rich flavour in one dish.
Hot Pumpkin Soup served 5.


Ingredients :

3 Roma Tomatoes,cubed
1 large Shallot, cubed
4 cloves Garlic, cubed
1 large piece Ginger, cubed
1/2 Red Onion, cubed
2 stalks Lemongrass
1/2 Pie Pumpkin, roasted, peeled, cubed
4-5 Pepper,if dehydrated, wrap in cheesecloth
1 can Coconut Milk
1/2 Pie Pumpkin,roasted and pureed
Chives
4 oz Roasted Red Chili Paste
1 can Baby Corn
7 cup Chicken Stock
Juice from Lime
1 oz Wood Ear Mushrooms
1/4 cup Sugar
1/4 cup Mirin
1/2 cup Soy Sauce
1/4 cup Nuoc Mam
1 bunch Cilantro
1/2 lb Mussels
1/2 lb Shrimp
3/4 lb Squid
10 oz Noodles


Coking Direction :


Saute the shallots, onion, and garlic in oil till soft.
Add the tomatoes, lemon grass and pumpkin and sweat for 10 minutes

Mix the pumpkin puree and the coconut milk
Add this to the vegetables. Drain
Add the corn
Cook for about 6 minutes. stirr frequently
Add the chicken stock, chives, mushrooms, lime, sugar, mirin, soy sauce, rice vinegar, chili paste, pepper
simmer for a couple of hours to thicken it.

Peel and vein the shrimp, clean the mussels, and clean and cut the squid

Add the noodles to the soup. Cook till al dente
Add the seafood. Cook for 6 minutes

Remove from heat and finish the soup with the cilantro.

Garnish with some mussels topped with chopped tomato and cilantro.
