Baked Macaroni and Cheese
Ingredients :
1/2 pound elbow macaroni
3 tablespoonful butter
3 tablespoonful flour
1/2 cup yellow onion, finely cubed
1 bay leaf
1/2 teaspoonful paprika
1 whole egg
1 tablespoonful powdered mustard
3 cups fresh milk
12 ounces sharp cheddar, shredded
1 teaspoonful kosher salt
Fresh black pepper, as needed
For the Topping :
3 tablespoonful butter
1 cup panko bread crumbs
Cooking Direction :
Preheat oven to 350F.
In a large pot of boiling, salted water cook the pasta to al dente
Put the butter in another pot, melted. Whisk in the flour and mustard and keep stirring for about 5 minutes.
Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika.
Simmer for about 10 minutes. Remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season well with salt and pepper.
Fold the macaroni into the mix
Remove into a dish
Top with the remaining cheese
Melt the butter in a saute pan and toss the bread crumbs to coat.
Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
note : You can save leftovers for fried Macaroni and Cheese
