Salmon Cake
Salmon Fish can be cooked for many kind of dish. Beside as a main course it can also cooked as a cake, suitable for appetizer or snack between meal time.This salmon cake recipe taste special combine with potatoes and lemon flavour

Ingredients :
500g potatoes, peeled
440g can red salmon
1 small grated onion, peeled
1 tablespponful lemon juice
1/2 cup plain flour
2 celery sticks, chopped
2 whole eggs, lightly beaten
2 tablespoonful milk
1 tablepoonful fresh dill, chopped
1 teaspoonful grated lemon rind
2 cups fresh breadcrumbs
olive oil, to fry
Salt and pepper as needed
Mayonnaise, to serve
Cucumber salad, for garnish
Cooking Direction :
Cut the potatoes into rough chunks. Boil till tender, then mash till smooth.
Transfer to a large bowl. Allow to cool
Drain the salmon and remove any bones. Transfer to the potatoes mixture.
Add onion, celery, dill, lemon rind and juice. Season with salt and pepper.
Mix well together, then use your hands to form into 8 patties
Refrigerate for 30 minutes.
Beat the eggs in a bowl. Add milk, mix till well combined
Put the flour and breadcrumbs in separate bowls
Dip each patty in the flour, then in the egg mixture and lastly in the breadcrumbs
Heat the oil in a heavy-based frying pan over medium-high heat
Add patties (in batches) and fry both sides till golden brown
Serve with mayonnaise and the cucumber salad
